- 2 teaspoons Dijon mustard
- 1 tablespoon white wine vinegar
- 8 teaspoons extra virgin olive oil
- 1/2 teaspoon honey
- salt and pepper
- 8 pieces good quality chicken
- 1 red onion, cut into wedges
- 1 red pepper, cut into large pieces
- 1 yellow pepper, cut into large pieces
- 4 whole garlic cloves
- 2 tablespoons olive oil
- salt and freshly ground black pepper

- Preheat the oven to 190 C / Gas 5.
- Mix together the Dijon mustard, wine vinegar, the 8 teaspoons olive oil, honey, salt and pepper until all elements combine. Add more oil, vinegar or honey to taste. Pour the vinaigrette over the chicken pieces in a roasting tin, and turn to coat.
- Roast the chicken in the preheated oven for 25 minutes.
- Place onion wedges, pepper pieces and garlic cloves in a bowl and toss with the 2 tablespoons olive oil. Season with salt and black pepper.
- Add to roasting pan and continue cooking until chicken is cooked through and crispy-skinned, and vegetables are tender, about 25 minutes more.
- Serve in the roasting tin.
