Kitchen knife, cutting board, baking sheet, blender.

Step 1: prepare the vegetables.

Rinse and dry all vegetables, as well as greens and mushrooms. Set aside greens, but cut mushrooms with vegetables into thin slices. Sprinkle the vegetables and mushrooms with salt on top.

Step 2: put the vegetables into shape.

In exactly the same thin slices, you should cut mozzarella. Grease a baking tray with vegetable oil.
Place slices of vegetables and mozzarella on a baking sheet, alternating them with each other. And so that everything bakes evenly, lay the layers at an angle. Thus, the layers will be the same thickness.

Step 3: prepare topping with crackers.

In a blender, mix crackers, parmesan, marjoram and parsley until smooth.

Step 4: sprinkle the vegetables with breadcrumbs.

Sprinkle the vegetables on top with the resulting bread and cheese crumbs and pour a small amount of olive oil.

Step 5: bake vegetables with breadcrumbs.

Bake at temperature 180 degrees during 30-40 minutesuntil the vegetables are cooked and soft.
You can bake vegetables in a large form, or you can in a cocotte, the size of the form usually does not affect the baking time.

Serve vegetables baked with breadcrumbs can be both hot and cold, both options are delicious. Be sure to try this simple, but such a wonderful dish.
