Step 1: clean the fish.

Cleanse fish from gills and entrails. Rinse well with cold water and salt on the inside. And put the fish in the refrigerator while you prepare the other ingredients.

Step 2: we stuff fish with spices.

Mix salt with wine and a slice of lemon. Mix until all the salt is wet.

Remove the fish from the refrigerator and put in each slices of lemon, bay leaves and peppercorns.

Step 3: bake the fish in salt.

Sprinkle some of the salt on the bottom of the pan, lay the fish on top and pour out the remaining salt. Wrap each hand with wet salt on each fish, sealing it tightly inside.
Meanwhile, preheat the oven to medium power and send fish to it in salt on 60 minutes, or until the salt crust hardens and becomes light brown.

Step 4: serve the salt-baked fish.

After baking, let the fish cool slightly to make it easier to remove the salt crust. And then just pry this very peel with a knife and it will easily come off.

And just as well, clean the other side of your fish from salt.

And serve it with polenta or any other side dish to your taste. The meat of the fish baked in salt easily leaves the bones, and the taste is simply amazing.
Enjoy your meal!

Recipe Tips:

- Salt is necessarily used coarse, since finely ground salt is simply inconvenient.
