Cooking a carrot and orange muffin:

Step 1: prepare the ingredients.

Peel the carrots, rinse well and grate on a fine grater.

Step 2: prepare the dough.

Break eggs into a deep plate, add sugar and beat with a mixer all together for 10 minutes.

When the mixture becomes homogeneous, pour flour mixed with baking powder into it and knead the dough with a spatula or blender (this is more convenient for you).

Add the lemon zest, vanilla sugar (can be replaced with vanilla extract) and soda to the dough. Mix well.

At the very end, add grated carrots to the dough. And again, mix everything thoroughly together so that the mass becomes a homogeneous consistency.

Step 3: bake a carrot-orange muffin.

It is better to take a mold for making a cupcake. Grease it with oil or cover it with parchment for baking, and then pour in the dough, leveling it on top.
Preheat the oven to 180 degrees and send it to bake your cupcake on 45-50 minutes. Check the readiness of the test with a toothpick; at the exit, it should be dry and clean.
Remove the finished cupcake from the oven and, leaving the mold, leave to cool at room temperature. And after the baking has cooled completely, remove it from the mold, sprinkle with powdered sugar and serve.

Step 4: serve the carrot and orange muffin.

Carrot-orange muffin - a treat for adults and children! Fragrant, delicious and very beautiful.
