A refreshing light lunch, this macaroni pasta salad combines cooked ham, celery, onion, green pepper and carrots with the zip and zing of mustard and vinegar for a dish that's flavourful and filling, without being heavily so.

  • 450g conchiglie (small shell) pasta
  • 250g mayonnaise
  • 4 tablespoons vinegar
  • 125g caster sugar
  • 2 1/2 tablespoons prepared mustard
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 large onion, chopped
  • 2 sticks celery, chopped
  • 1 green pepper, seeded and chopped
  • 4 tablespoons grated carrots
  • 450g diced cooked ham

  1. Bring a large pot of lightly salted water to the boil. Add pasta, and cook until al dente, 8 to 10 minutes. Drain pasta, but do not rinse. Let stand 5 minutes.
  2. To make the dressing combine the mayonnaise, vinegar, sugar, mustard, salt and pepper in a bowl. Set aside.
  3. Combine the onion, celery, pepper, carrots and ham in a large bowl. Stir in the dressing. Add the pasta and toss gently to blend all ingredients. Chill at least 4 hours before serving.

A little too sweet for a pasta salad recipe. I tried making this recipe w/ only a 1/4 cup of sugar instead of the 2/3 called for, but I think if I'd make it again, I'd only use a tablespoon of sugar.-05 Jul 2007

Great recipe. My parents loved this salad. It was a great little twist to a mac salad. I added some chedder and swiss cheese and mushrooms. I didnt like the mushrooms but the cheese was good. I plan on making this salad for a 4th of July party. Yes, its that good. Although I only used about 3/4 of the dressing....so you could cut back on that a little.-02 Jul 2007

Thought this was a great recipe but added and adjusted a bit. I reduced the mayo and sugar some. I thought the texture and sweetness after refrigeration turned out just right. I also added olives, cherry tomato, hard boiled egg, peas, and a bit of pickle relish. I always sneak in as many veggies as I can for my family dinners. Thanks for the great recipe!-19 Dec 2008


Ham And Cheese Pasta Salad

Pasta salads are so versatile. For one, it is quite filling and can easily be served for lunch or as a light dinner.

We usually have this Ham and Cheese Pasta Salad on a Friday night. Especially when the weather is hot and humid.

Something I do not like much about pasta salads, is that the salads are usually doused in dressing, whether it be a Mayonnaise dressing or something else.

The dressing I use in this recipe is just enough to add flavor and to not get the salad buried way under Mayonnaise.

You can of course double or even triple the quantity of dressing if you prefer a moister salad.

When we have guests over, I make an additional batch of the dressing and serve it on the side. That way each guest can help themselves to more (which does happen a lot).

People&rsquos taste are different and whenever I am in doubt (with salads) I always serve either the dressing on the side, or as with this recipe. A little in the salad and a small bowl next to the salad bowl.

The pasta salad itself is very simple, with everyday ingredients. I get a thick cut of Ham from our local deli and chop it into small bite-sized cubes.

But when we had home cooked Ham a day or two before and have some leftovers, I prefer to use that.

Now and then I would also add Pineapple. But only when I am sure the salad will be eaten the same day as I have found the Pineapple makes the salad a little too acidic the next day.

If I do make the salad the night before, I only add the Pineapple the following day. And not more than 2 &ndash 3 hours in advance.

One other thing about this salad is that you have to let it chill a couple of hours (2 hours at least) in order for all the flavors to really work together.

My youngest son loves asparagus. It is one of the few green vegetables that he likes, so I am always experimenting with new ways to serve it. I decided to try it in a pasta salad, but I usually only put raw vegetables in my pasta salads and I knew that wouldn&rsquot fly. Instead of sauteeing the asparagus as he prefers, I steamed it which was the perfect compromise.

I used a large pasta pot that has a steamer basket to steam the asparagus while cooking the pasta. This saved me time and meant I had one less pan to wash at the end of the day. You can see how easy this salad is to make in the video:

The dressing on this salad is not a traditional dressing that you would use on a garden salad. It has a zesty lemon flavor that is intended to subtly enhance the flavors of the vegetables in the salad without overpowering them. These are the long-handled measuring spoons I use to measure honey and spices from the bottom of deep jars.


The pasta, farfalle, can also be referred to as bow-tie pasta. Not shown below, shallots and garlic which add flavor to the base of the cream sauce. sauteed as the base of the cream sauce.

Variations:

  • Use any shape pasta your family enjoys. I prefer small shapes like farfalle (bow-ties), shells, and elbow macaroni. Gluten-free pasta can be used
  • We use shallots but you can also use onions, red onions, or ½ teaspoon onion powder. Don&rsquot have any onion or powder, leave it out.
  • Mozzarella is delish and is ooey-gooey and a staple for this recipe. For me, no substitute. In a pinch, for the alternate cheese, you can experiment. Gruyere or Gouda cheese are tasty substitutes.
  • Italian seasoning is my go-to seasoning as it packs a few herbs. Dried oregano or basil also works well.

The two salads are actually quite similar. The Puerto Rican version has more ingredients including cheese, olives, red onion, hardboiled eggs, and a few others. Both do include ham and carrots though.

What are the ingredients to make Mexican Macaroni Ham Salad?

To makes this ensalada de macaroni recipe you are going to need the following ingredients:

  • Small macaroni noodles
  • Mayonnaise
  • Mexican sour cream or crème fraiche
  • Salt
  • Pepper
  • Sliced ham
  • Can of mixed vegetables
  • Pickled jalapenos, if desired

How to make Mexican Macaroni Ham Salad

Now that you have gathered your ingredients, it is time to make the Mexican macaroni salad. All you have to do is follow the steps below:

First things first. Cook your pasta according to the directions for al dente pasta.

Drain the pasta and then allow it to cool. You can also run the pasta under cold water to help it cool faster. Remember, it&rsquos important to cool your pasta before adding the dressing or the mayonnaise will separate.

You can then toss your pasta in a little oil to prevent the pasta from soaking up the dressing and creating a dry salad.

Mix the mayonnaise, Mexican sour cream, salt, and pepper until well combined.

Toss the pasta with the dressing until well combined. A great tip is to stir up the salad in a bowl with a tight-fitting lid.

Put the lid on and turn the bowl upside down a few times to coat the pasta with the dressing.

Stir in the additional ingredients and then store in the fridge for at least 30 minutes. This will give the flavors time to combine.

Your Mexican Macaroni Ham Salad is ready to serve!

  1. Add pasta, chicken broth, heavy cream, garlic, and pepper to the cooker.
  2. Close lid, seal valve, and pressure cook 2 minutes for thinner past or 3 minutes for thicker pasta (see recipe footnotes).
  3. Allow 10 minute NPR (don't skip this step).
  4. Release any remaining steam.
  5. Stir in Parmesan cheese until creamy. Then stir in ham and peas.
  6. Close lid with vent open to warm the ham and peas in "keep warm" mode.
  7. Open lid, give a stir, and serve warm garnished with parsley.

2. Place pasta in Thermoserver and cover with boiling water. Set aside.

3. Add carrot, zucchini & spinach to TM and chop - 3 sec/speed 6. Set aside.

4. Add onion, garlic and oil - chop 3 sec/speed 6. Saute 5 min/120 deg/speed 1.

6. Add (to TM bowl) chopped vegetables, stock, ham, cheese, eggs and pasta - mix "Counter-clockwise operation" 10-15 sec/speed 4.

7. Spoon into muffin cases (I use silicone) and bake for 15-20 minutes.

8. Serve hot or cold. Freezes well too!
